Cheesy Potato Casserole

Ingredients:

  • 1 30 oz package of frozen shredded hash browns
  • 1 16 oz container sour cream
  • 2 cups shredded cheeses (sharp cheddar and pepper jack)
  • 1 10.75 oz can of cream of chicken
  • 4 garlic cloves, minced
  • 1 white onion, minced
  • Italian bread crumbs
  • Panko bread crumbs
  • salt an pepper
  • butter, melted
  • chives, chopped

Ingredients:

  1. Preheat oven to 425 degrees F. Chop the white onion and mince the garlic. In a skillet, heat some butter and saute the onion and garlic for 3-4 minutes.
  2. Add the hash browns, sour cream, shredded cheeses, can of cream of chicken, onion, garlic, salt, and pepper to a large bowl. Mix mixture thoroughly until all ingredients and add to a 9″ x 13″ bake dish.
  3. Add a liberal layer of Italian bread crumbs to cover the entire surface area. Then add a small layer of Panko bread crumbs. This second layer adds extra crunch and texture.
  4. Cover the dish with aluminum foil and bake for 30 minutes.
  5. After 30 minutes, remove the foil. Drizzle some butter over the top of the bread crumbs and continue cooking until the top gets golden brown, about 10-15 minutes.
  6. Remove from oven, and top with chives. Serve hot!
